Shrimp Bites

 

Ingredients

THIS DISH IS SIMPLE, HEALTHY, AND A CROWD PLEASER. PERFECT FOR BRUNCH, LUNCH, DINNER OR AS A SNACK, SERVED EITHER CHILLED OR ROOM TEMPERATURE.

-RAW, CLEANED, DEVEINED SHRIMP

-DEK

-ENGLISH CUCUMBERS (SLICED)

-GOAT CHEESE

-SALT, PEPPER, GARLIC, DILL, RED PEPPER FLAKES TO TASTE

Directions

  1. MARINADE SHRIMP IN DEK
  2. SEASONING. SET ASIDE
  3. MIX GOAT CHEESE, HERBS, AND SPICES. SET ASIDE.
  4. SLICE CUCUMBER. SET ASIDE.
  5. SAUTEE SHRIMP UNTIL THEY ARE NO LONGER TRANSLUCENT. DO NOT OVERCOOK.
  6. PUT A DOLLOP OF GOAT CHEESE MIXTURE ON EACH SLICE OF CUCUMBER AND ARRANGE SHRIMP ATOP.
  7. ENJOY!!!!

Rice and Beans

 

Ingredients

-EVOO

-1/3 Chopped Salt Pork

-Salt, Pepper

-1 Chopped Green Bell Pepper

-1 Chopped Red Bell Pepper

-1 Med Size Chopped Spanish Onion

-Fresh Garlic

-DEK

-1/2 CupTomato Sauce

-Rice

-1 Bottle Beer or Cooking Wine

-1 Jar Green Olives with pimentos

-Green Pigeon Peas

-Chicken Stock 

-2 Packets Sazon

-Goya Adobo

-1/3 Dried Oregano

Directions

  1. Sautee the salt pork, adding green pepper, red pepper, and onion.
  2. Add garlic.
  3. Add your DEK
  4. Add tomato sauce
  5. Add rice STIRRING constantly
  6. Allow rice to absorb all liquid.
  7. Add your beer or white cooking wine.  mix, mix, mix.
  8. Add green olives with all the juice.  stir, cover, let simmer, watching for drying out and sticking.
  9. Add pigeon peas, stir, stir stir.
  10. Add stock, mix and simmer.
  11. Add More DEK to taste.  
  12. Add oregano as the rice is perfecting.
